Fichi con crema alle spezie


Avevo circa 10 anni quando ho ascoltato una canzone dei Beatles per la prima volta, mio fratello aveva comprato Rubber Soul ed aveva cominciato ad ascoltarlo tutti i giorni. A quell'etá la musica per me non esisteva, proprio non mi interessava, ma un giorno mi sono resa conto che dalla stanza accanto si sentiva una canzone che cominciava ad essermi familiare. Ho imparato a riconoscerla subito dalle prime note e in un attimo ho capito che mi piaceva tanto. Ho chiesto chi stesse cantando e poi ho pensato che fosse il caso di dare un volto a quella voce meravigliosa. 
Mi ricordo il momento in cui mio fratello ha indicato la sua foto sulla copertina dell'album e non dimenticherò mai la mia reazione: ho avuto un tuffo al cuore, è stato amore a prima vista, un sentimento nuovo per una bambina di 10 anni, ma poi ho avuto un'illuminazione ed ho pensato: " Si!!! E' questo il motivo per cui i grandi si sposano!!!"
Così sono diventata una fan e da allora Paul ha sempre portato tanta gioia nella mia vita.
Sfortunatamente non parlavo inglese quindi non capivo neanche una parola di quello che dicesse tranne il nome di una ragazza fortunata: Michelle.
D'altra parte, devo dire che ho sempre avuto molto senso pratico e quindi ho chiesto ai miei genitori di poter fare una lezione privata d'inglese. Alla fine degli anni 70 studiare inglese alle scuole elementari era insolito e così sono stata la prima, tra le mie amiche, a vivere questa esperienza emozionante. 
Alla fine il momento tanto atteso è arrivato, ero felicissima e intimorita al tempo stesso così mi sono seduta accanto alla mia insegnante con le manine nascoste sotto il tavolo; non osavo toccare la pagina con il testo della canzone che stavo per imparare.
Alla fine dell'ora, tutte la parole di Here, There and Everywhere erano impresse nella mia mente e quel giorno ho scoperto l'altra mia grande passione, l'inglese, la lingua della musica. Da allora Paul e l'inglese hanno sempre fatto parte della mia vita.
Cosa c'entra questa storia con la mia ricetta? 
I fichi e la crema sono le due cose da mangiare che amo di più per questo ho deciso di metterle insieme. Insomma se Paul e l'inglese sono essenziali nella mia vita, questo frutto dolcissimo e la crema sono essenziali nella mia cucina  :))

Ingredienti:
Fichi
1 cucchiaio di ricotta per ogni fico
Zucchero di canna
Anice stellato
Zafferano
Cannella
Semi di papavero
Malto di riso o miele

Preparare la crema con le spezie, riempire i fichi e decorare con il malto di riso.

I was about 10 years old when I heard a Beatles song for the first time, my brother had bought Rubber Soul and began to listen to it everyday. I was not interested at all in music at that time but one day I realised that, in the next room, a song was beginning to be familiar to me, I acknowledged it and suddenly I liked it a lot. I asked who was playing and then I thought I should see a picture of the boy who was singing. 
I remember my brother pointing at his face on the album cover and I will never forget my reaction: my heart leapt, it was love at first sight...and as a little girl I thought: "Oh, this must be the reason why people get married!".
This is how I became a fan and since then Paul has never stopped to bring joy to my life and in many different ways...
Unfortunately I didn't speak English therefore I didn't understand a single word of what he said except for the name of a very lucky girl: Michelle..
However I can also say that I have always been a pragmatic person so even at that young age I asked myself: "how could I sing a song without knowing the language?"
So one day, eager to find a solution, I brought the problem to my parents attention and begged them to let me try a private English lesson just to see what it was like. At the end of the 70's studying english in Italy was not so common in primary school so I was the first among my friends to have this experience.
Then the day arrived, I was excited and afraid at the same time so I sat next to my Italian teacher with my little hands hidden under the table, not daring to touch the page with the lirics of the first song I was finally going to learn.
By the end of the hour, all the words of Here, There and Everywhere remained imprinted on my mind forever and, on that day I discovered a new lifelong passion of my life: English, the language of music. Ever since that day Paul and English have always been a significant part of my life.
What does this story have to do with my recipe? Figs are, along with cream, the things that I like to eat the most. Just as Paul and English are essential to my life, the combination of figs and cream are essential for my palate. So, I decided to put them together.

Ingredients:
Figs
1 Tbs ricotta cheese for each fig
Brown sugar
Saffron
Cinnamon
Poppy seeds
Star anise

Mix ricotta with the spices, fill the figs and decorate with rice malt or honey.

Battenburg cake


Happy Birthday, Sir James Paul McCartney! I love you!


Battenburg cake tratta dal libro Small Cakes di Roger Pizey

Ingredienti:
175gr di burro
175 di zucchero a velo
3 uova
175gr di farina autolievitante
100gr di marmellata
250gr di marzapane
colorante rosso alimentare

Montare il burro con lo zucchero, unire le uova e infine la farina. Versare metà del composto in una teglia da 26x7x8cm. Aggiungere il colorante all'altra metà del composto e versare in una teglia delle stesse dimensioni. Cuocere a 160° per circa 30 minuti. Dopo aver lasciato raffreddare, con un coltello tagliare la parte esterna dei due dolci e poi dividerli in due.
Scaldare la marmellata, con un pennello passarla sui lati interni per unirli.
Mettere il marzapane in una ciotola, aggiungere il colorante e se necessario dello zucchero a velo per lavorarlo. Stenderlo su un foglio di Silpat o se preferite tra 2 fogli di carta da forno. Spennellare la parte esterna del dolce con la marmellata e ricoprire con il marzapane.

NB. Ho sostituito la farina seguendo le dosi consigliate su un sito web americano: ad una measuring cup si aggiungono un cucchiaino di lievito e un pizzico di sale, una cup di farina pesa 130gr, ne ho preparate 2 ossia 260 gr e ne è avanzata un pò.
Non ho usato le 2 teglie previste nella ricetta ma 4 piccole vaschette da plum cake da 13x7cm, il dolce è venuto piccolino ma buono!

Battenburg Cake from Small cakes by Roger Pizey

Ingredients
175gr unsalted butter
175gr caster sugar
3 eggs
175gr self-raising flour
red food colouring
100gr apricot or raspberry jam
250gr
pack ready-made marzipan

Preheat the oven to 170°. Cream the butter and sugar together, beat in the eggs and slowly fold in the flour.
Pour half of the mixture into a greased loaf tin measuring 26X7X8cm. Add a few drops of red food colouring to the remainder of the mixture and pour into a second tin of the same size.
Bake for about 20-25 mins. Leave in the tins for a couple of mins before turning out onto a wire rack.
When cooled, using a knife, square off the sponges and cut both in half lengthways. Warm the jam, then paint the inside edges of the sponges with some of it. Stick the sponges together.
Place the marzipan in a bowl, add the red food colouring and work it into the marzipan with your hands. Roll out a sheet of marzipan approximately 5mm thick to cover the cake. Brush the cake with more jam and cover it with the marzipan.

Crocchette di legumi e peperone rosso

Dopo ripetuti tentativi, tutti falliti, credo di aver quasi vinto la sfida sulla cottura dei legumi. Lo so, è vergognoso non riuscire a cuocere i legumi, ma che ci posso fare? Posso solo provare e riprovare, chiedendo consigli agli esperti. Ne ho buttati tanti di legumi secchi...Ogni volta ho seguito le istruzioni con attenzione: li ho messi a bagno una notte poi ho provato a cuocerli sorvegliando la pentola e sperando che lo sguardo amorevole li intenerisse...invece niente! Duri come sassi, poco meno di come erano nella confezione. Delusa dagli insuccessi ne ho parlato un pò ovunque e tutti mi hanno sempre ripetuto la stessa sfilza di domande, "ma... hai fatto questo? hai fatto quello?" e io "si! :(( "ma allora perchè?" e io "boh.." Poi un giorno un mio amico chef mi ha suggerito di usare il bicarbonato anche durante la cottura. Ho ripreso il sacchetto di ceci, metà era finito nella spazzatura con la seconda metà è andata bene o quasi! Si, perchè io non amo le mezze misure, quindi avendo esagerato e raddoppiato la dose di bicarbonato suggerita, dopo neanche mezz'ora mi sono ritrovata con una deliziosa crema di ceci:-D Niente di grave, anzi! Quella dose l'ho usata per preparare le prime crocchette di legumi che sono venute buonissime. Con la stessa ricetta ho preparato quelle della foto ma usando i cannellini, questa volta in scatola, perchè la cottura dei ceci del giorno precedente mi aveva procurato tensione e stress! :-D Ma in senso positivo perchè alla fine ero proprio contenta, avevo vinto la mia battaglia e visti i risultati avevo decisamente annientato un potenziale nemico: una cottura impossibile! Grazie Diego!


430gr di fagioli cannellini già cotti
olio d'oliva
aglio
100gr di zucchine, solo la parte esterna
100gr di peperone rosso
1/2 uovo sbattuto
2 cucchiai di pangrattato
noce moscata
basilico

Frullare i fagioli. Nel robot da cucina sminuzzare le verdure e cuocerle in un tegame con aglio e olio. Lasciare raffreddare. Mescolare le verdure e i fagioli. Aggiungere mezzo uovo sbattuto e condire con sale, noce moscata e basilico. Se l'impasto dovesse essere troppo liquido aggiungere 2 cucchiai di pangrattato e lasciare riposare fino a che sarà diventato sufficientemente denso per preparare le crocchette. Cuocere in forno a 200° per 30 minuti.

After so many trials, all failed, I believed I won the challenge on how to cook legumes. I know I should be ashamed of myself for not being able to cook legumes, but what can I do? I can only try and try again or ask for advice from those who seem to know more than me. Each time I carefully followed the whole procedure: I soaked them overnight, then I tried to cook them while keeping an eye on the pan hoping that my loving gaze would soften them...no way! They remained as hard as little stones, almost as hard as they were in their packaging. Disappointed by all my failures I began to talk about it here and there only to listen to people asking the same questions over and over again: "Did you do this? Did you try that?" and I went: "Yes :(" "Well now, why?" and I: "I don't know!" Then one day a chef friend suggested using baking soda while cooking them. I took back a packet of chickpeas, half of it had already ended up in the dust bin whit the other half, however, it went well or almost...! Yes, because there is no in between for me, so having exagerated and doubled the suggested dose of baking soda, after less than half an hour, I found myself with a delicious chickpea cream! :-D No big deal, on the contrary! I used that cream to make my first batch of legume croquettes which came out very good! With the same recipe I made the ones in the picture by using cannellini beans, the canned ones this time, because cooking chickpeas the previous day, exhausted me and made me stressed! But in a positive sense of course, because in the end I was really happy: I won my battle and considering the endd result I can say I defenitely annihilated a potential enemy: an impossible cooking method! Ingredients:
430gr cooked cannellini beans
olive oil
garlic
100gr red pepper
100gr zucchini, only the green part
1/2 beaten egg
2 Tbs grated bread
basil
nutmeg
Blend the cannellini or chickpeas in a food processor until creamy. Set aside. Chop the vegetables into very small pieces then put in a pan and cook with garlic and olive oil. In a bowl, put the cream of legumes with the vegetables and mix well. Add the egg, salt, nutmeg and basil. If the mixture is too moist add some grated bread and leave to rest for 10 mins until it has absorbed all the liquid and is thick enough to shape the croquettes. Cook in oven at 200° for 30 mins.
