Cannelloni con zucca e taleggio

Riflessioni di fine anno: quanto si sta male senza il vecchio computer...
Dopo mesi di disagi, culminati con il giorno in cui il mio adorato computer si è spento definitivamente con un lungo fischio, oggi sono di nuovo qui. Sembra guarito, grazie ad un team di esperti che non lo hanno abbandonato fino a che non si è rimesso a funzionare senza rumori strani e affaticamenti. Ero pronta a comprarne uno nuovo, più bello e con uno schermo più grande, una meraviglia! Mi piacciono le cose nuove, tutte e mi libero sempre di quelle vecchie senza rimorsi. In più mi piace comprare, sono una fan dello shopping eppure quando ho saputo che avrei avuto di nuovo il mio vecchio computer mi sono sentita sollevata, come se stesse tornando a casa un caro amico. 
Ci si affeziona anche alle cose, lo sento dire spesso...ma non io, non sono mai stata così quindi posso dire che questa è stata la prima volta in cui ho scoperto di essermi affezionata ad un oggetto e ora anche il mio vecchio computer sembra avere un' anima, non me ne ero mai accorta! Parlando seriamente, sono contenta di aver scoperto un lato nuovo di me cioè di non essere una vittima al 100% del consumismo, questo ha fatto sì che riaccogliessi a casa il mio IMac con grande emozione e rispetto :)) Lui ha ripreso a lavorare a ritmi non troppo sostenuti, aspettavo di vedere le sue reazioni e per ora sembra tutto ok. Bentornato e buon 2011 anche a te caro vecchio IMac ;))

Ingredienti x 12 cannelloni

300gr farina
3 uova
1 cucchiaio di olio

Ho impastato la pasta all'uovo nel Bimby e poi ho steso la pasta con il mattarello. Ho formato dei rettangoli di pasta di 10x15 cm e li ho lessati per 3 minuti. Li ho scolati e immersi in acqua fredda. Infine li ho stesi su una tovaglia e nel frattempo ho preparato il ripieno.

Ripieno
700gr di zucca
cime di rapa, già lessate
200 gr taleggio
200 gr mozzarella
parmigiano
noce moscata
salvia

Ho cotto la zucca al forno a 200°, condita con poco olio e sale. In una ciotola ho messo la zucca, le cime di rapa che non ho pesato perchè erano gia lessate. Ne ho messe un pò, giusto quelle che servivano per ottenere 12 porzioni. Ho condito tutto con olio, sale e salvia. Nei cannelloni ho messo le verdure e i formaggi a pezzetti. 

Infine ho preparato una finta bechamel, senza burro, ho mescolato un cucchiaio di farina con un bicchiere di latte e ho fatto addensare. L'ho messa sui cannelloni ed ho aggiunto del parmigiano e una spolverata di pepe.

End of year reflections: how difficult my life was without my computer.....

After months of troubles, culminating in the crashing of my computer with a long dreadful whistle, I'm back at last!
My computer seems to have recovered magnificiently, thanks to a team of experts that never abandoned it until it started working again, without any weird sounds or "mental strain".
I was ready to buy a new one, nicer, with a bigger monitor: absolute perfection!
I like new things and I easily get rid of the old ones without regrets. Furthermore I really am a shopping fan, yet when I knew my old computer would be back to me I felt relieved, as if an old friend of mine was coming home. "You even get attached to things..." I hear it said... but this is not true in my case, I've never been like this so I can say that this was the first time I found myself caring so much about an object. So, little did I know that even my old computer has a soul! Seriously speaking, I'm happy I found this new side of me; that is, I'm not a total victim of consumism, this is why I welcomed home my IMac with open arms :))
It almost got back to his daily routine, I'm not pushing him too hard, I don't to wear him out...I just got it back after all! So, I'm monitoring his reactions and everything seems to be ok for now. Welcome home and Happy 2011 my dear old IMac!!

Ingredients for 12 cannelloni:

300gr flour
3 eggs
1 Tbs olive oil

I've made the dough in the Thermomix, I rolled it by hand and cut it into 10x15 cm rectangles. Bring a large pan of water to a boil, salt and pour some olive oli to prevent the pasta pieces from sticking. Cook for 3 mins. Drain and rinse under cold water. Place the pasta on a towel and let it dry.

Filling:
700gr pumpkin
1 head broccoli, boiled
200gr taleggio cheese
200gr mozzarella cheese
parmesan cheese
nutmeg
sage

Cut the pumpkin into small pieces, season with salt, olive oil, sage and bake until soft. To prepare the cannelloni, put the vegetables and the cheese over each pasta sheet and roll it up.
For the bechamel sauce:
1 cup milk
1 Tbs flour 

Gradually add milk to the flour, cook on low heat and stir until thick. Season with salt and nutmeg. Pour it over the cannelloni and sprinkle with parmesan cheese.

Si avvicina il weekend londinese e finalmente rivedrò la mia amica Carole Anne.
Ci siamo conosciute nel 1997 quando, dopo un’estate noiosa,  io e Gianni abbiamo deciso di fare qualcosa di nuovo e che sognavo da tanto tempo: una vacanza studio a Londra, 2 settimane in famiglia e la mattina a scuola.
La famiglia che ci ha ospitato abita in una zona molto bella del Surrey, attraversata dal Tamigi, piena di viali alberati e di case con giardini curati e silenziosi.
Era il mese di ottobre e ovviamente pioveva tutti i giorni ma non è una cosa di cui lamentarsi a Londra perché, come diceva il mio insegnate, la real London è quella sotto la pioggia.
Il pomeriggio dopo la scuola facevamo un giro a Londra e volendo avremmo potuto fermarci a cena e prendere l’ultimo treno, ma alla fine non l’abbiamo mai fatto perché abbiamo capito che era meglio cenare a casa.
La signora che ci ospitava, Carole Anne, ha condiviso da subito la sua passione per la cucina e, avendo girato mezzo mondo, in 14 giorni ci ha accompagnato in viaggio gastronomico indimenticabile, dando alla nostra vacanza un’impronta culinaria tanto inaspettata quanto gradita.
Che fortuna, vero!?
La sua cucina è piena di vita, come lei del resto, che riesce a preparare la cena per tutti con disinvoltura e nel frattempo ti intrattiene per l’aperitivo, mentre il marito, Graham, versa da bere agli ospiti che restano in cucina per seguire i preparativi.
Naturalmente non potevo partire senza la mia collezione di ricette e quindi una sera ho preso il mio quaderno e le ho detto: “Carole Anne, tu cucina e nel frattempo detta!”
La ricetta degli Shortbreads viene da quel quaderno scritto a Londra durante uno dei tanti weekend in cui sono tornata a trovare i miei nuovi amici. Carole Anne l’ha avuta dalla suocera, Sheena, una deliziosa ed elegante signora di Glasgow che ho avuto il piacere di conoscere qualche anno fa.
Nel caso Sheena dovesse vedere la foto spero che approvi il risultato, comunque erano buonissimi e molto friabili. Carole Anne li ha serviti con le fragole e la panna montata, una vera delizia!

Song of the day: Young Boy...

Ingredienti:
115 gr burro morbido
100 gr margarina
115 gr farina di mais
225 gr farina
85 gr zucchero

Lavorare il burro, lo zucchero e la margarina. Aggiungere le 2 farine e lavorare l’impasto fino a renderlo molto morbido. Mettere  in una teglia di 20x20 cm rivestita di carta da forno e fare dei forellini con una forchetta. Cuocere a 180° per 30 min. Togliere dal forno e passare la pasta su un tagliere aiutandosi con la carta da forno. Tagliare a quadrotti e rimettere in forno per altri 10 minuti.

My weekend in London is just around the corner and I will see my friend Carole Anne.
We met in 1997 when , after a boring summer, Gianni and I decided to do something different that I had been wanting to do for a long time: a 2-week stay in a host family with English classes at school in the morning.
The host family lives in a beautiful area in Surrey. The River Thames flows through the village where the streets are lined with trees and houses that have quiet, tidy gardens. It was October and it rained almost everyday, but this is not something to complain about because, as my teacher said, the real London is the one you see under the rain.
In the afternoon, after school, we would go to have a stroll around London, where we could have stopped for dinner and then taken the last train, but in the end we never stayed, because we soon realised that going back for dinner was certainly a better choice.
The lady who hosted us, Carole Anne, shared, right from the beginning, her passion for food.  Because she had travelled around the world, in 14 days she took us on a gastronomic tour that gave a strong culinary character to our holiday that was as unespected as it was pleasant. How lucky we were!
Her kitchen is full of life, just as she is: she can easily make dinner for everyone and at the same time entertain her guests with a tasty appetizer while her husband, Graham, serves drinks to her audience.
Of course I couldn’t have left the house without a recipe collection so one evening I took my notebook and told her: “ While you cook you talk and I’ll write!”.
This recipe comes from that notebook, written in London during one of the many holidays I have spent at my new friends’ house.
Furthermore it is an authentic Scottish recipe that was given to my friend by her mother in law, Sheena,  who is a lovely, elegant lady from Glasgow that I was pleased to meet some years ago.
In the case that Sheena sees this photo, I hope she will approve of the result, aanyway they were delightful!
Carole Anne once served them with whipped cream and strawberries, delicious!

Ingredients:

4 oz  soft butter
3 ½ margarine
4 oz cornflour
8 oz  flour, plain
3 oz sugar

Cream sugar, butter, margarine. Add flour and cornflour together in two batches.
Spread evenly in a flat tin and prick with a fork..
Cook in preheat oven for 30 minutes at 180°. Take out, slice and sprinkle with with sugar. Cook for 5 minutes longer and then open the door and leave on bottom shelf to cool for 10 minutes.

Patate speziate con crema di zucchine

Se non fossi stata così spesso in Inghilterra e in America forse oggi cucinerei molto meno e sarebbe un vero peccato per me! 
Non c'è niente da fare, ogni volta che entro in cucina la memoria mi riporta sempre lì, nei ristoranti di New york, Los Angeles, San Francisco e Londra perchè quei viaggi mi hanno lasciato tanti bei ricordi e tante idee per la mia cucina.  
In questi giorni mi sto preparando per un weekend londinese e quindi non c'è niente di meglio di un bel piatto di Spicy Potato Wedges per ricreare l'atmosfera giusta,  le ho mangiate per  la prima volta proprio a Londra da Sticky Fingers e poi, ovviamente, anche in America. 
Piccolo particolare: siamo stati da Sticky Fingers un venerdì sera di tanti anni fa e me lo ricordo ancora molto bene, pur avendo poca memoria, perchè qualcuno mi disse che i Rolling Stones avevano cenato lì il mercoledì, solo due giorni prima...personalmente preferisco credere che mi abbiano detto una bugia....le potato wedges erano ottime ma non le ho digerite bene subito dopo  ;)))

Ingredienti
patate a pasta gialla
olio d'oliva
sale
paprika dolce
pepe
erbe di Provenza

Lavare e tagliare le patate a spicchi senza sbucciarle. Cuocere nel micronde per 3 minuti. Disporre le patate su una teglia rivestita di carta da forno. Con l'aiuto di un pennello da cucina condire gli spicchi con olio d'oliva, aggiungere le spezie e passare in forno per 20 minuti a 200°.

Crema di zucchine
olio d'oliva
3 zucchine
2 pomodori secchi
1 cucchiaio di semi di zucca
sale

Tagliare a pezzi le zucchine eliminando la parte bianca. Frullare e cuocere con olio (e aglio se vi piace) per 15 minuti nel Bimby a 100° oppure in un tegame fino a che non siano ben cotte. Se le cuocete nel tagame aggiungete un pò d' acqua durante la cottura.
Nel frattempo immergere i pomodori secchi tagliatti a pezzetti e i semi in acqua bollente per dieci minuti. Scolare bene e mescolare alle zucchine.

If I hadn’t travelled so often to America and England, I would surely not cook as much as I do today. What a shame that would be for me!
There is nothing to do, everytime I get into the kitchen my memory brings me back there, in the restaurants of New York, Los Angeles, San Francisco and London because those trips have left so many beautiful memories and have inspired so many ideas for my kitchen.
Recently, I have been getting ready for a weekend in London and I think there is nothing better than a good serving of Spicy Potato Wedges to recreate the atmosphere for getting me in the mood. I ate them for the first time at Sticky Fingers and then, of course, also in America.
“Minor detail”: we went to Sticky Fingers one Friday night, many years ago, and I still remember it clearly because somebody told me that the Rolling Stones had been there for dinner on Wednesday, only 2 days before. Personally, I prefer to think that they lied to me…
The Potato Wedges were really good but I didn’t digest them soon after I discovered that I had missed such a wonderful opportunity!

Song of the day: “I wanna be your man” lent to the Fab Four to the Stones at the beginning of their career.

Ingredients:
potatoes
olive oil
salt
paprika
black pepper
herbes de Provence

Wash and cut the unpeeled potatoes into wedges. Don’t dry the potatoes and cook them in the microwave for 3 minutes.
Arrange the potaoes on a baking dish, brush them with olive oil, season with the spices and salt and cook in oven for 20 mins at 200°.

Zucchini dip

olive oil
3 zucchini, only the green part
2 sun dried tomatoes
1 Tbs pumpkin seeds
Salt

Cut the zucchini into pieces, put in a blender and process until finely chopped.. In a pan, heat some olive oil and one clove of garlic . Put the zucchini in the pan and cook until soft, adding some water if necessary. In the Thermomix, cook for 15 mins at 100°.
In the meantime, put the pumpkin seeds and the sundried tomatoes, cut into pieces, in a small bowl of hot water. Let sit for 15 mins. Drain well and  mix with zucchini.
