Riso ai fiori di zucca e rucola

C'è un silenzio surreale a Ferragosto, quando tutti sono in vacanza io sono a casa e per "tradizione", questo silenzio si spezza alle 10 con la musica dei Beatles a tutto volume. In questi giorni, ogni anno, posso finalmente ascoltare quello che mi pare senza rischiare di disturbare nessuno. E' una sensazione di grande libertà anche perchè nonostante tutti conoscano la mia passione, per qualche strana forma di riservatezza, mi fa piacere vivere l'esperienza dell'ascolto in modo intimo, ci sono solo io e e loro voci: nessuna intrusione esterna. Una volta all'anno si può fare.
Il piatto di oggi è un risotto estivo dal sapore molto delicato, faceva parte del Menù del mio matrimonio, è un "buon" ricordo legato ad una giornata molto movimentata!

Ingredienti per 4: 10 fiori di zucchina un mazzetto di rucola aglio olio d'oliva parmigiano brodo vegetale o acqua margarina o burro
Pulire i fiori eliminando i pistilli e conservare la parte carnosa alla base del fiore che, come mi spiegò lo chef (sì, anche quel giorno mi sono preoccupata di avere la ricetta!) è quella più saporita. Scaldare l'olio e l'aglio, aggiungere i fiori e la rucola tagliata a pezzetti. Cuocere le verdure e aggiungere il riso, farlo tostare girandolo continuamente per 2 minuti. Versare il brodo o l'acqua bollente e girare una sola volta. Ripetere fino a cottura ultimata del riso. Lo chef mi disse anche che non è necessario mescolare il riso più volte durante la cottura e da allora faccio sempre così, si tiene a fuoco basso e non si attacca. Alla fine aggiungo una noce di margarina e il parmigiano. Lascio riposare un minuto prima di servire.

There is a surreal silence on this Mid August Holiday, when everybody is away I'm home and as a "tradition" I break this silence at 10am with the Beatles music at full volume.
During these days, every year, I can finally listen to anything I like without the worry of disturbing the neighbourhood. It's a great feeling of freedom because, even though many people know about my passion, I still prefer to keep it private and like to live the listening experience in a more intimate way. This is when it is only me and their voices: no external intrusion. Once a year it's allowed.
The dish of the day is a summer risotto that has a delicate taste. It was on my Wedding Menu and is therefore a "good memory" of a very hectic day!

Ingredients for 4 people: 10 zucchini flowers a handful of arugula1 clove garlicolive oil parmesan cheese vegetable broth or water margarine
Clean the zucchini flowers removing the stem and the pistils, being careful to leave the fleshy part at each base intact, the chef told me (yes, even on that day I worried to asked for the recipe!) that it gives it all the flavour.
Heat oil and garlic in a deep pan, add the flowers and arugula and cook until tender. Put in the rice and toast it for a minute, stirring constantly. Pour enough broth over the rice to cover it and stir only once. The chef also told me that I shouldn't stir all the time. Ever since, whenever I cook rice, this is what I do, I keep it on low heat so it won't stick to the pan. When ready, I turn off the heat, I add a knob of margarine and parmesan cheese and stir one last time. I leave the rice to stand for a minute before serving.
