Pane alle olive

Le canzoni di Paul si dividono in almeno 3 categorie:
quelle che ho ascoltato di più, quelle che ho cantato di più e quelle che oggettivamente considero le più belle.
A volte la stessa canzone rientra in 2 categorie o anche in tutt'e tre, dipende dal giorno, dal tempo etc.
Alla prima categoria appartiene Fixing A Hole, durante uno degli anni delle scuole medie l'ho ascoltata quasi tutti i giorni, tutto il pomeriggio, non riuscivo a smettere, secondo me aveva un potere incantatorio. Quel periodo, forse il 1982, lo ricordo come il mio anno psichedelico, il secondo in realtà perchè il 1967, l'anno in cui uscì Sgt. Pepper è quello in cui sono nata.
Alla seconda categoria appartiene She's Leaving Home, che non ho ascoltato così spesso ma che ho cantato tanto e ancora lo faccio, dall'inizio: " Wednesday morning at five o'clock as the day begins...".
Alla terza categoria appartiene Back in the Ussr: un capolavoro, voce splendida.
Dicevo che ci sono almeno tre categorie perchè ognuno di noi fans ha le sue, forse ne ho dimenticata qualcuna importante, non so.
Per la ricetta, a proposito di categorie, scelgo la cosa che mangio di più: il pane, anzi, per la precisione ne mangio troppo, questa sarebbe un'altra categoria!


Ingredienti: 250 gr di farina di grano duro 250 gr di farina manitoba 160 ml di acqua 160 ml di latte 1 bustina di lievito di birra secco attivo 1 cucchiaio di sale 1 cucchiaio di zucchero olive verdi olio d'oliva
Setacciare le farine in una ciotola. Scaldare l'acqua e il latte fino a raggiungere i 35° circa e versare sulla farina insieme al lievito e allo zucchero. Aggiungere il sale in un angolo della ciotola lontano dal lievito. Lavorare gli ingredienti, raccogliere tutta la farina e incorporare il sale per ultimo. Coprire con la pellicola e lasciare lievitare per 2 ore. Stendere la pasta, con un pennello passarci l'olio d'oliva e cospargerla con le olive. Arrotolare la pasta nel senso della lunghezza e tagliare dei dischi di pasta spessi 2 cm. Posarli sulla teglia in cui avrete messo un foglio di carta da forno e lasciare lievitare per altri 45 min.
Preriscaldare il forno a 250 e infornare per 10 min, abbassare la temperatura a 180 e lasciare cuocere per altri 20 circa.

Olive bread

Paul's songs are divided into, at least, 3 categories:
The ones I have listened the most, The ones I have sung the most and the ones I consider objectively the most beautiful. Sometimes the same song falls into 2 or all 3 categories. It depends on the day, the weather, etc....Belonging to the first song is Fixing a Hole, during secondary school I used to listen to it everyday, for almost a year, all afternoon! I don't know why I chose this song, maybe it had got an enchanting power, I couldn't stop! I like to remember that time, maybe 1982, as my psychedelic year, my second actually, because I was born 1967 just when Sgt. Pepper was released. In the second categories there is She's leaving Home, same album. It's a song I haven't listened to so often but it's certainly the one I have sung a lot and I still do it, from the beginning: "Wednesday morning at 5 o'clock as the day begins...."Third categories: Back in the USSR. a masterpiece, wonderful voice.I was saying that there are at least 3 categories, in reality more categories can be found: each one of us fans has its own. As a recipe, talking about categories, I chose the thing that I eat
the most: bread. Actually I eat too much bread, but this should be another category!

Ingredients: 250gr manitoba flour 250gr durum wheat flour 160ml water 160ml milk 1Tbs sugar 1Tbs salt 1 sachet active dry yeast olive oil green olives

Sift flour in a bowl. Heat milk and water until warm and pour over the flour together with yeast and sugar. Add salt in a corner of the bowl avoiding contact with the yeast. Begin to work the ingredients, using up all the flower and incorporating salt at the end of kneading. Rest the dough covered with a cling film for 2 hours until doubled. Roll it into a rectangular shape, brush with olive oli and spread with olives. Roll up the doug beginning with long side. Cut into 2 cm slices and place in a pan over a baking sheet. Let rise again in a warm place about 30 mins. Heat oven to 250°. Bake for 10 mins, reduce heat to 180 and bake for 20 more mins.

Blueberry Muffins

C'è stata un'altra Signing Session la scorsa settimana a Londra e noi non eravamo lì. La notizia è arrivata troppo tardi , con solo 2 giorni di anticipo. Che rabbia! Quando ho visto la gente, venuta da tutto il mondo, fare la fila come abbiamo fatto noi 2 anni fa mi sono pentita di non essere andata. Solo parlando e riparlando con Manu mi sono convinta, oggi, che non era il nostro momento e che effettivamente un giorno per organizzare tutto era veramente poco. Ci consoliamo ricordando che almeno una volta lo abbiamo incontrato e che come dice Manu, 30 secondi o poco più della sua vita, Paul li ha dedicati anche a me, a noi tre.
Intanto mangiamoci un dolcetto :))

Ingrdienti: 1 1/2 tazza di farina bianca 1/2 tazza di farina integrale 3 cucchiaini di lievito 1/2 cucchiaino di sale 1/2 di bicarbonato 1/2 tazza di zucchero 1 uovo 4 cucchiai di olio di semi 3/4 tazza di latte 1 banana 1 tazza di mirtilli Per il crumble: 1/4 tazza di fiocchi d'avena 2 cucchiai di zucchero di canna e 2 di zuccheo bianco 2 cucchiai di margarina 1 cucchiaino di farina bianca e 1 di farina integrale

Mettere in una ciotola l'uovo e lo zucchero e lavorarlo con la frusta elettrica fino ad ottenere un composto spumoso. Aggiungere l'olio e il latte e mescolare. Setacciare a parte la farina, il lievito, il bicarbonato, il sale e unire tutto all'impasto liquido. Versare i mirtilli e mescolare ancora. Distribuire negli stampini da muffins imburrati.
Preparare velocemente il crumble: in una ciotola mescolare la farina, i fiocchi e lo zucchero. Unire la margarina e lavorare il crumble con le dita fino a che non diventi uniforme. Metterne una piccola quantità su ciascun muffin. Infornare a 160° per 30/40 min.

There has been another signing session in London and we weren't there! The news came out too late with only 2 days notice! When i saw on tv all the people , from all the world, queueing up like we did I began to regret not going, I'm so angry! Only by talking and talking over it with Manu, I convinced myself, today, that (effettivamente) one day to get organized was very little time. We are comforted by remembering that at least one time we have met him and that, as Manu says, Paul dedicated at least 30 seconds or more of his life just to me, to the 3 of us:))

Ingredients: 1 1/2 cup white flour 1/2 cup whole wheat flour 3 tsp baking powder 1/2 tsp salt 1/2 tsp baking soda 1/2 cup sugar 4 Tbs oil 1 banana 3/4 cup milk For the crumble: 1/4 cup oats 2 Tbs brown sugar 2 tbs white sugar 2 tbs margarine 1 tsp white flour 1 tsp whole wheat flour

Preheat oven to 160°. In a bowl mix egg and sugar, add oil and milk. Wisk together the flour, baking powder, baking soda and salt and add to the mixture. Stir to combine. Pour in berries, stir in to coat. Spoon batter into greased muffin pans, filling each cup about 2/3 full. In a small bowl combine the flour, oats and sugar. Add the margarine and work it with your fingertips until you have a uniform crumble. Sprinkle each muffin with a generous amount of crumble. Bake for 30/40 minutes.

Spaghetti con zucchine e zafferano

Durante gli ultimi mesi sono stata molto impegnata, ho trascorso 5 settimane in un B&B perchè stavamo facendo i lavori a casa, quindi non ho potuto cucinare e neppure fare foto.
Ora che sono tornata a casa mi rendo conto di quanto non mi piaccia rimettere in ordine quando non si riesce a trovare il metodo giusto, ci è voluto un secolo per decidere dove mettere tutte le mie, anzi le nostre cose e anche ora sto continuando ad eliminare gli oggetti inutili che inondano la casa.
In pratica, sto facendo un grande sforzo per cercare di diventare una persona organizzata (un sogno!) e per iniziare una nuova vita in una nuova casa. Ma, si sa, cambiare la nostra natura non è facile, infatti ho perso tutti i CD di Paul! Non uno o due Cd, ma tutti!
Fortunatamente dopo qualche settimana sono riapparsi, forse perchè ho smesso di cercarli. Mi perdo le cose continuamente e mi arrabbio per questo motivo almeno una volta al giorno.
In genere chiamo mio marito che è bravissimo a ritrovare le cose che perdo ma questa volta ho deciso di aspettare perchè, come mi dice sempre lui con ragione, perdo troppo tempo nella mia vita a cercare...
Tornando ai cibi, visto che per tutto questo tempo non ho potuto cucinare ho scelto la prima foto che ho scattato con la macchinetta che mi ha prestato Simone quando ho deciso di iniziare il blog. Ero contentissima del risultato anche se è una ricetta proprio semplice ma anche molto veloce: la ricotta era freschissima ed esaltava il profumo intenso dell'olio d'oliva bio che ho usato.


Per 2 persone: 2 cucchiai di ricotta zafferano 2 zucchine 3 cucchiai di olio d'oliva 1 spicchio d'aglio parmigiano
Ho usato un coltello taglia julienne e ho tagliato le zucchine nel senso della lunghezza evitando la parte interna. Cuocere le zucchine in un tegame, dopo aver scaldato l'aglio e l'olio, per circa 15 min. Aggiungere lo zafferano e la ricotta e mescolare. Cuocere gli spaghetti e saltarli nel tegame per un minuto. Condire con poco parmigiano.

I was very busy over the last months and spent 5 weeks in a B&B because we were having some works done in our home, so I couldn't cook nor take any pictures of course.
Now that I'm back home I realise how much I hate tiding up, actually it took me ages to find a place for everything and I'm still trying to get rid of all the useless things that inundated my house.
In a few words, I'm really making an effort to get more organized than I used to be and to leave a different life in a new house. But, as you know, changing our nature is not easy in fact I lost all my Paul CDs!!! Not just one or two but all of them!
Luckily, after a week they reappered, maybe because I stopped searching for them. I always misplace things and I get really frustrated when I can't find them. Normally I call my husband for help because he is great at finding the things I lose but this time I decided to wait because he says that I waste too much time looking for things and he is right.
Well, as I couldn't cook for all this time I choose the very first picture I took when I decided to start my blog, I was very happy with the result even if it's a very simple recipe and also very quick: ricotta cheese was so fresh and I liked the way it enhanced the flavour of the organic olive oil I used.

Spaghetti with zucchini and saffron

For two people: 2Tbs fresh ricotta cheese saffron 2 medium zucchini 3Tbs olive oil 1 clove garlic parmesan cheese
Using a julienne peeler cut zucchini lenghtwise into thin strips avoiding the seedy core.
Heat the olive oil and garlic in a skillet over a medium heat, add zucchini and sautè until golden and tender for 15 minutes.
Add saffron powder and ricotta and mix until well combined.
Cook the pasta in a saucepan of boiling salted water, drain and stir the pasta into the zucchini mixture.

Macca Veggie Burger

Oggi mi sono dedicata al giardinaggio, anche se non ho un giardino! Ho potato l'edera del mio balcone e l'ho messa in un piccolo vaso. Un rametto è nella foto sopra.

Il 22 Novembre del 2006 io, Pat e Manu abbiamo conosciuto Paul.
Ogni volta che ci incontriamo ripetiamo dall'inizio tutta la storia dell'incontro, avvenuto in occasione di una Signing Session a Piccadilly Circus.
Pat tempo fa ha notato che la storia, con il tempo, si arricchisce sempre di più di particolari: una parola, una sensazione, qualcosa di "importante" che ci era sfuggito di mente. I nostri ricordi ora sembrano appartenere ad un'altra dimensione, ad un mondo lontano nel tempo, popolato da fantasmi, cavalieri, maghi e fate in un susseguirsi avventuroso di eventi che ci ha portato al castello del re: una scrivania del Virgin Megastore di Piccadilly Circus. Dopo una lunga notte al freddo, trascorsa sul marciapiedi di Piccadilly e dopo circa 20 ore di fila, insieme ad una folla di gente proveniente da tutto il mondo, il giorno seguente siamo riuscite finalmente ad arrivare al trono. Il mio mito era lì e mi stava aspettando....un raffinato signore inglese con la voce più bella del mondo ha parlato con me e mi ha ascoltato per un momento che sembrava non finire mai...Mi ha dato la mano (io non avrei neanche osato sfiorarlo) e mi ha chiamato "Sweetheart". Era tutto vero o forse stavo sognando? Un istante dopo ero sulle scale del negozio e due simpatiche signore mi hanno aiutato a scendere mentre piangevo come una fontana...

Ritornando all'edera...

Dopo l'evento siamo andate ad Abbey Road per una veloce session fotografica e più tardi, passando davanti ad un giardino Manu ha strappato un rametto di edera che ci ricorda Londra e quel giorno speciale di 2 anni fa.

Panini

Ingredienti: 1 tazza di latte 1/4 tazza zucchero 1 bustina di lievito di birra secco attivo 4 tazze di farina 1/4 tazza margarina 1 uovo 1 cucchiaino di sale
In una ciotola ho setacciato la farina e aggiunto il lievito, lo zucchero e il sale. A parte ho mescolato il latte tiepido, la margarina, dopo averla sciolta a fuoco basso e l'uovo. Ho iniziato a lavorare gli ingredienti nella ciotola e poi ho trasferito il tutto su un piano leggermente infarinato e ho impastato per 5 minuti. Ho messo la pasta nella ciotola, l'ho coperta con la pellicola e un canovaccio umido e ho messo a lievitare per 2 ore vicino al termosifone, in questo modo l'impasto è raddoppiato velocemente. Ho steso la pasta in un rettangolo di circa 3 cm di spessore ed ho usato il taglia pasta più grande che avevo. Ho lasciato lievitare nuovamente per circa un'ora. Ho messo i panini nel forno preriscaldato a 180° e li ho lasciati cuocere per circa 20 minuti.

Hamburger

Ingredienti: 100 gr di olive nere snocciolate, tagliate a pezzetti 1 tazza di verdure cotte
1 1/2 tazza di riso integrale cotto 20 gr parmigiano 30 gr noci frullate 1 uovo 1 spicchio d'aglio olio d'oliva
Ho cotto le verdure in un tegame con due cucchiai di olio d'oliva e uno spicchio d'aglio. Per la ricetta della foto ho usato peperoni rossi e cipolle di Tropea, ma potete usare ovviamente le verdure che preferite. Ho rivestito di carta da forno una teglia di circa 20x30 cm e ho versato gli ingredienti precedentemente mescolati in una ciotola. L'impasto aveva circa 2 cm di spessore, quindi scegliete la teglia in base allo spessore che desiderate ottenere. Ho messo la teglia nel forno riscaldato a 180° per circa 45 minuti. Ho lasciato raffreddare e ho usato lo stesso taglia pasta dei panini per formare gli hamburgers.

I did some gardening today, even though I haven't got a garden! I pruned the ivy on my balcony and put a cutting in a small vase. A small branch is in the above picture.

On 22nd November 2006, Pat, Manu and I met Paul for the first time in our lives.
Every time we see each other now, we repeat the whole story of our night in Piccadilly Circus prior to an in-store signing session.
Pat has noticed that the story is getting richer and richer in detail as time goes by: a word, a feeling, something "important" that had slipped our mind.
Our memories now seem to belong to a different world, a distant past, a universe populated with ghosts, knights, magicians and fairies, an adventurous succession of events which led us to the castle of the king: a desk in the Virgin Megastore in Piccadilly Circus.
Although I had had to camp out in the cold the night before the signing, when the following day broke, after queuing for over 20 hours, I finally managed to reach the throne. My knight in shining armour was there waiting for me... a gentle Englishman with the most beautiful voice in the world chatted to me for what seemed like for ever but was really only a moment. Then he held out his hand to shake mine and called me "Sweetheart"... Was it real or was I dreaming?
All I remember is being helped down the stairs, crying tears of joy....

Back to the ivy...

The three of us then went to Abbey Road for a quick photo session. Passing by a nice house, my friends picked a small branch of ivy poking over the fence. That ivy reminds us of London and of the special day we spent there 2 years ago.



Hamburger buns
1 cup milk 1/4 cup sugar 1 sachet active dried yeast 4 cups flour 1/4 cup margarine, melted 1 egg, beated 1tsp salt
In a large bowl, mix flour, salt, sugar and yeast. In a small bowl combine warm milk with egg and margarine, then add to the floour mixture. First I mix all ingredients in the large bowl then I knead it on a lightly floured surface for at least 5 minutes until smooth. At that point put the dough in the bowl, cover it and let rise until doubled in volume, about 1 1/2 hour. I made these buns on a cold day, so I covered the bowl with cling film and wet dish towel and put it by the room heater. Put back on floured board and roll out about 2 1/2 cm thick. Cut with large size biscuit cutter. Place buns on baking dish and let rise until doubled. Bake at 180° for 20 minutes.

Hamburgers
100 gr black pitted olives (cut in small pieces) 1 cup cooked vegetables (red bell peppers and red onions) garlic 2 Tbs olive oil 1 1/2 cups cooked brown rice 20 gr parmesan cheese 30 gr walnuts, finely chopped 1 egg

In a skillet, cook vegetables and 1 clove garlic with olive oil. I used red peppers and red onions.
In a bowl mix all ingredients. Line base and sides of a baking dish, about 20x30 cm, with non-stick paper. Spoon the mixture (which was 1 1/2 cm thick) in the dish and bake at 180° for about 45 minutes. Let cool.
Use the large size biscuit cutter to form the hamburgers.

Cake salato con pomodori secchi

E' inutile domandare a mio marito se preferisce che prepari qualcosa di salato o di dolce, eppure continuo a farlo. La risposta è sempre la stessa: salato. In effetti l'idea di provare un cake salato andava anche a me e così ho scelto un abbinamento semplice, pomodori secchi e formaggio primo sale, solo per vedere se sarebbe venuto bene. La quantità degli ingredienti base funziona, poi si possono creare anche accostamenti più insoliti dei due che ho scelto io e magari, dividendo l'impasto base in due ciotole, si possono fare gusti diversi. Purtroppo non avevo il basilico ma solo un pò di erba cipollina che non ha dato l'aroma giusto, nei prossimi giorni comprerò qualche piantina. Il risultato finale è buono, l'esperimento ha funzionato!
Sarà perchè ero ispirata da Tug of War.....

Ingredienti:
100 gr di farina di grano duro 150 gr di farina bianca 50 gr di fiocchi di cereali misti (sostituibili con la stessa quantità di farina) 1 bustina di lievito per torte salate 3 pomodori secchi interi (6 pezzi in totale, ne avrei messi di più ma sarebbe venuto troppo salato, se ne volete mettere altri togliete il sale) 50 ml di olio d'oliva 150 gr di formaggio primo sale 3 uova 110 ml latte 1 cucchiaio di parmigiano 2 pizzichi di sale

Mescolare la farina con i fiocchi e il lievito. Tagliare i pomodori secchi a striscioline e lasciarli ammorbidire in acqua bollente per mezz'ora. Aggiungere le uova, il latte, l'olio il parmigiano e il sale e mescolare con le fruste elettriche e infine aggiungere i pomodori secchi e il formaggio tagliato a cubetti di 3 cm circa. Cuocere a 160° per 40 minuti circa.

Savoury cake with sundried tomatoes

There is no point in asking my husband if he'd prefer sweet or savoury, yet I keep on doing it. The answer is always the same: savoury.
Actually, I was rather taken with the idea of trying to make a savoury cake and so chose a simple combination of sun dried tomatoes and primo sale cheese, just to see what would happen. The quantity of basic ingredients worked well and it’s easy to invent new flavours. By dividing the basic mixture in two bowls, it might even be possible to make two different cakes at the same time. Unfortunately I didn’t have any basil to hand when I made the recipe and used chives instead, I'll definitely buy a basil plant! Nevertheless, the final result was tasty and the experiment worked!
Maybe because I was inspired by Tug of War....

Ingredients:
100g durum wheat flour; 150g white flour; 50g mixed cereal flakes; 1 sachet baking powder; 3 sun dried tomatoes; 50 ml olive oil; 150g primo sale cheese; 3 eggs; 110 ml milk; 1 tbs parmesan cheese; 2 pinches of salt.

Mix the flour with the cereal flakes and the baking powder. Cut the tomatoes into strips, cover with boiling water and soak for 30 minutes. Add the eggs, oil, parmesan cheese , milk and salt to the flour and cereal mixture and beat with an electric mixer until fluffy. Add the tomatoes and cheese, cut into cubes, and cook for about 40 minutes at 160°.

Pasta con zucca , porcini e pane alle mandorle

Questa sera è venuto a cena il nostro amico Simone, webmaster del sito OffTheWeb e del forum su Paul nonchè grande fotografo di eventi musicali :)) Per lui ho preparato questa pasta che io ho mangiato di corsa perchè lui, mentre guardava la partita con mio marito, mi ha lasciato provare il nuovo obiettivo che ha comprato e che piacerebbe anche a me.
La pasta è andata bene e il commento è stato: "Buona! Certo in questa casa un piatto di spaghetti aglio e olio non si mangia più!".
Incontrare Simone mi ricorda sempre i giorni del concerto al Colosseo, la voce di Paul che legge il mio poster con il mio nome, preparato per l'indimenticabile 10 Maggio 2003.
Mi ricordo l'incontro della sera prima con tutti gli amici di offTheWeb, che non avevo mai visto prima e con i quali ci si conosceva solo via mail e mi ricordo di Calico Skies,il brano che più mi ha colpito in quella serata speciale in cui Paul suonò per sole 400 persone. Ero in terza fila a pochi metri da lui, ho disturbato tutti quelli che erano intorno a me ma lui rispondeva ai gridolini miei e dei miei amici, era contento e sorrideva. Ama il pubblico adorante, non c'è dubbio.
Insomma da quel giorno in poi ho tormentato tutti con questa canzone, chiedendo se anche agli altri fosse piaciuta così tanto quella versione live con la fisarmonica di Wix (veramente originale), ma sfondavo una porta aperta.
Poi Simone mi ha chiesto quale nickname avrei usato per il forum ma io ho risposto che non sapevo cosa scegliere. Ha scelto lui per me CalicoSabry perchè così resto legata alla mia Calico Skies.


Ingredienti:
Per 2/3 persone: 200 gr di zucca butternut 100gr di funghi porcini 6 mandorle 2 cucchiai di pane grattugiato 1 cucchiaio di olio d'oliva rosmarino peperoncino 250 gr di pasta

Ho frullato le mandorle nel macinacaffè e le ho mescolate al pane e al rosmarino tagliato a pezzetti, poi ho fatto tostare il tutto in un padellino, a fuoco basso, per 5 minuti fino che si sente il profumo delle mandorle.
Ho cotto la zucca con uno spicchio d'aglio e il peperoncino in una pentola coperta per 20 minuti, ho aggiunto i porcini surgelati e ho lasciato sul fuoco per altri 15 minuti. Ho cotto la pasta al dente e l'ho ripassata in padella per qualche minuto. L'ho messa nei piatti e infine ho aggiunto un cucchiaio di pane caldo sulle tre porzioni.

Pasta with butternut squash, porcini, almond flavoured bread

This evening our friend Simone came for dinner. Simone is the webmaster of Off the Web, a website and forum dedicated to Paul. He is also a great live music photographer:))
I made this pasta dish for him and my husband who were busy watching a football match on television. Although I wolfed my food down as I wanted try a highly coveted new lens Simone had brought with him, I think it was OK. Indeed, Simone’s comment was: "That was good! I must say, you never get run of the mill pasta in this house!".
Seeing Simone always reminds me of Paul’s concerts at the Colosseum in Rome in 2003 and especially his voice when he commented on the poster I made for him with my name and the words "Stay with us forever": "OK Sabrina, I'll try" he said with a smile. I couldn't believe he was speaking to me!!!
The evening before that concert was the first time I met the rest of the members of the Off the Web forum with whom I had previously merely exchanged e-mails. The highlight of the concert was Calico Skies, the song I thought he played best that special evening. It was 10th May 2003 and Paul played for about 400 hundred people. I was in the third row, just a few metres away from my idol. I’m sure I disturbed all the people around me, but he answered me and my friends every time we screamed something like "you are great, we love you" etc.. He looked so happy. There’s no doubt Paul loves an adoring audience.
From that evening on, I annoyed my friends with constant chatter about that song - did they like the live version? Did they agree that Wix’s accordion was brilliant? - but I was preaching to the converted!
When Simone asked me to choose a nickname for the Off the Web forum and I was unable to decide, he called me CalicoSabry as it was a way of linking my name to the beautiful Calico Skies.

Ingredients for 2/3 people:
200g butternut squash or pumpkin; 100g frozen porcini mushrooms; 6 almonds; 2 tbs fresh breadcrumbs; 1 tbs olive oil; chopped rosemary; 1 dried red chili pepper; 250g pasta

Grind the almonds in a food processor and mix them with the fresh breadcrumbs, the chopped rosemary and the olive oil. In a small heavy bottomed saucepan toast the bread for a few minutes over a low heat until golden. In another pan, heat the garlic and the dried red chili pepper together with 2 tbs of olive oil. Add the butternut squash or pumpkin cut into chunks, cover and cook for 20 minutes. Add the porcini mushrooms and cook for another 15 minutes. Cook the pasta in boiling water until it is al dente (just tender), drain and place in the pan. Cook over high heat for 1 minute. Serve the pasta topped with 1 tbs of the heated breadcrumb mixture.

Frappe

Quando avevo 15 anni se mi chiedevano come volessi mascherarmi per Carnevale inventavo una bugia. Inventavo una di quelle maschere che si portavano allora: da bambola, da "anni '30", da punk....
Se avessi detto la verità i miei amici di allora non avrebbero capito, loro purtroppo ignoravano.
Il mio sogno era quello di vestirmi come i Ragazzi nel Magical Mistery Tour e così sfogliavo il libricino dell'album con quelle foto meravigliose e pensavo che prima o poi l'avrei fatto, che mi sarei mascherata così, ma ancora non è successo.
Tuttavia la vita, a proposito degli amici, riserva delle sorprese, infatti i miei amici di oggi non solo capiscono al volo a cosa mi riferisca a proposito dei vestiti del Magical Mistery Tour ma sono così precisini e anche un pò saputelli in materia Beatles (queste sono soddisfazioni! :))) che sono convinta che mi saprebbero descrivere i vestiti nei minimi dettagli, nei colori etc. senza dover andare a riguardarsi le foto, come farei io.
Ad esempio sono sicura che la mia amica e sorella Pat, che ha scoperto i Beatles proprio attraverso le foto di quell'album, non ha neppure finito di leggere il post perchè sta già pensando a come fare il nostro vestito. Mi sembra di sentirla, con il suo accento toscano, lei che non perde mai tempo: "Ecco sabry, è bell'e fatto!"

"Roll up for the Mistery Tour, step right this way!!!"

Ingredienti: 250 gr di farina 30 gr si burro 30 gr di zucchero 1 uovo un pizzico di sale un bicchierino di marsala
Ho mescolato gli ingredienti dopo avere sciolto lentamente il burro e ho aggiunto il marsala un pò alla volta, la pasta deve essere elastica e asciutta. L'ho stesa con la macchina per la pasta all'uovo regolandola alla fine sul penultimo spessore. Ho cotto le frappe al forno a 160° per meno di 10 minuti.

Frappé carnival biscuits

When I was 15, whenever someone asked me what I wanted to dress up as during carnival week, I lied. I told them I wanted to dress up as a doll, as a 1930's film star, as a punk ... If I had told them the truth, they wouldn't have understood because unfortunately they were not fans like me. So they were never to know that my dream was to dress up as one of the "4 lads" in The Magical Mystery tour. As I flipped through the sleeve notes of my copy of the record and studied every detail of the wonderful pictures with which it is illustrated, I hoped that sooner or later I would have the courage to do it … to dress up as a Magical Mystery Beatle. Alas, I must confess I’m still waiting to find that courage ….
Nevertheless life never fails to surprise me and, indeed, not only do my friends of today immediately understand what I mean when I talk of my love for The Beatles, many of them are even more pernickety than me, the kind of people who know every detail of everything the Beatles have ever done (what a satisfaction!:))) and who, I'm sure, could describe every nuance of the clothes they wore in The Magical Mystery Tour without needing to refer to the pictures as I do.
To be quite honest, I'm convinced that even though Pat, a friend and “Macca-sister” of mine who discovered The Beatles through MMT, hasn't even finished reading this post, she is already thinking about how to make us an MMT costume.
I can see her now – she’s not known for wasting time – as she comes up to me, saying in her broad Tuscan accent: "Here you are, Sabry! Your costume is ready!"

Ingredients:
250g flour; 30g butter; 30g sugar; 1 egg; a pinch of salt; a small glass of wine or liquor;

Put the butter in a saucepan and heat gently until melted. Pour the melted butter into a bowl and beat in the egg. Sift the flour and salt over the mixture. Add the wine gradually (the quantity will vary depending on the flour) and use your hands to work the dough into a ball. Wrap the dough in clingfilm and put it in the fridge for half an hour to rest. Roll the dough out very thinly (I use a pasta machine) and cut it into strips of approximately 3/4 cm in width. Bake for about 10 minutes at 160°. While cooking, bubbles will form on the surface. Beware, these biscuits burn easily and need to be removed from the oven as soon as they are ready (probably not altogether).
Brush with lemon or orange juice (optional), and dust with icing sugar.
Fried frappé are found in all cake shops in Italy during carnival week, although baked frappe are also readily found. I prefer the baked variety (mainly because I'm not very good at frying!).

Tortino con fonduta al gorgonzola

Canticchio Paul ovunque, sottovoce ma ovunque, anche in luoghi o situazioni in cui gli altri normalmente non cantano.
Non è colpa mia, il fatto è che tutto quello che mi circonda mi riporta alla sua voce, la "vedo" in ogni luogo. Non è difficile, basta una parola in inglese e subito mi viene in mente una strofa, se vedo il sole canto Good Day Sunshine, se qualcuno mi disturba canto Get Out of my Way se sono in difficoltà o devo camminare molto penso a quanto la strada sia "long and winding", se si parla della Scozia canto Mull of Kintyre.
Noi Macca Fans, dopo tanto tempo siamo diventati amici e dunque parliamo di tutto, ma un piccolo spazio per una "citazione" , soprattutto tra amiche, lo troviamo sempre, è divertente e un pò ci distoglie dai pensieri. Un esempio: "Mi sono svegliata presto oggi" e Manu risponde: "Anch'io", a questo punto magari aggiungiamo qualcosa del tipo: "Chissà lui a che ora si sveglia la mattina..." oppure "Chissà cosa mangia a colazione..." e via di seguito, tutte le scuse sono buone per farlo stare tra noi.
Per quanto riguarda il cibo sappiamo che ama la frutta, che il suo piatto preferito è l'arrosto vegetariano con verdure e patate al forno. Infine l'abbiamo visto bere l'English breakfast tea con il latte, come me e Manu, ma non so se abbiamo altro in comune (?).
Tornando al mio tortino, mi ricordo che mentre lo mettevo nel piatto ho pensato: "Però, com'è soffice. Anzi, com'è soft". E da lì il passo è un pò forzato ma inevitabile: soft porta a softness, softness porta a A Certain Softness. Durante la scorsa settimana l'ho ascoltata almeno 3 o 4 volte al giorno e quando non l'ho potuta ascoltare, ça va sans dire, me la sono cantata!
Ma che vita sarebbe la mia senza Chaos and Creation in the Backyard? Per fortuna non lo so :))
Insomma Paul è anche un gioco ma è vero che al di là di questo gioco da adolescenti, sebbene non lo siamo, c'è qualcosa che non ha niente di ridicolo, c'è una passione e una stima infinita per un uomo che non ha mai trascurato chi lo segue da anni come me, che lavora con la stessa intensità e impegno di sempre e che non smette mai di sorprendermi: lui è unico.

Ingredienti: 400 gr di broccoli 2,5 dl di latte 40 gr di farina 2 uova basilico 80gr di gorgonzola 20 gr di fecola di patate 2 dl di latte

Lessare i broccoli e nel frattempo scaldare il latte con la farina per farlo addensare. lasciare raffreddare e versare tutto nel mixer con le uova, il basilico e il sale. Suddividere il composto negli stampini di alluminio e cuocere in forno a 160° per circa 45 min. Sciogliere il gorgonzola con il latte in un pentolino a fuoco basso, quindi aggiungere la fecola e mescolare ancora per qualche minuto. Lasciare raffreddare per 20 min o fino a che la crema abbia raggiunto la consistenza che preferite, la mia è troppo liquida, avevo fretta di fare le foto e la giusta consistenza l'ho ottenuta solo quando ormai era ora di pranzare!

Veggie Flan with Cheese Fondue

I sing Paul's songs everywhere I go, sottovoce but constantly, even in places and situations in which people don't normally sing.
It's not my fault. It's just that everything around me makes me think of his voice. I "see" it everywhere. It's not difficult. All it takes is a word in English (not my mother tongue) to set me off. Indeed, song lyrics are constantly springing into mind: when I see the sun, I sing Good Day Sunshine; when somebody is bothering me, I sing Get Out of my Way; when I'm in trouble or have to walk a lot, I think of a long and winding road; whenever Scotland is mentioned, I sing Mull of Kintyre.
We Maccafans have long since become friends and consequently talk about many different things. Yet even when we are not talking about music, there is always room for a "mention". It’s something which makes us laugh, something which distracts us. If I call Manu and our conversation turns to the fact that "I got up early this morning", she will reply "Me too" and at that point we might say something like "Who knows what time he gets up in the morning" or "What does he have for breakfast?" and so on. Every excuse is a good one for welcoming him into our lives.
As far as food is concerned, we know he likes fruit and that his favourite dish is vegetarian roast with potatoes and vegetables. Furthermore, we have seen him drink English breakfast tea with milk - both Manu and I do – although I don't know if we have anything else in common.
Returning to my veggie flan, while I was putting the flan onto the serving plate I remember thinking: " It's so soft!" The next step was inevitable: soft – softness - A Certain Softness. Over the last week I have listened to this song 3 or 4 times a day. When I couldn't listen to it, ça va sans dire, I sang it!
What would my life be like without Chaos and Creation in the Backyard? Luckily I don't know :)).
Well, Paul is also a source of entertainment. I adore him like teenagers, even though I no longer fall into the right age bracket, yet there is nothing ridiculous about my passion, my respect and my esteem for a man who has never neglected fans like me, who has always worked with the same enthusiasm and commitment and who always manages to surprise: there is only one Paul.

Ingredients:

400g cauliflower; 2.5 dl milk; 40g flour; 2 eggs; basil; 80g gorgonzola; 20g potato flour; 2 dl milk

Cook the cauliflower in salted boiling water until tender. Drain and cool. In a saucepan heat the milk and the flour over a low heat. Stir until thickened and then remove from the heat. In a blender or food processor blend the cauliflower, the white sauce, the eggs, the basil and the salt until perfectly smooth. Divide the mixture into muffin tins and bake for 45 min or until a wooden skewer comes out clean.
To make the cheese fondue, melt the cheese together with the milk and the potato flour in a small heavy based saucepan. Cool for about 20 minutes or until the fondue has reached the desired consistency. Mine was too liquid as I was too impatient to take photos of it. Unfortunately for the photo it only reached the right consistency at lunchtime!

Cupcakes

Come far oscillare una fan indifesa tra una gioia incontenibile e una grande malinconia nell'arco di 2.57 min? Basta scrivere My Ever Present Past e pubblicarla sull'album Memory Almost Full.
Mi ricordo che mi è piaciuta tanto da subito, è bella e sconvolgente. E soprattutto mi ricordo quella strana sensazione di euforia mista a tristezza. Paul parla del suo passato che è trascorso "in a flash" ma che è sempre presente.
E allora mi sono detta: se il suo passato è Ever Present per lui figurati per me! Infatti io non ho più ricordi di un mio passato senza Paul, lui c'è sempre stato ed è una grande fortuna, anche se gli anni sono passati velocemente e proprio attraverso MEPP comincio a sentire più forte il peso della nostalgia.
A questo punto chiamo in mio soccorso la Signora Linda Collister, la dea del cioccolato, che con le sue creazioni addolcisce la vita!
La ricetta è tratta dal libro "Chocolate", il mio è in inglese ma tempo fa l'ho visto anche in italiano. Lo consiglio a tutti, non mi stanco mai di sfogliarlo, le foto sono splendide, le ricette sono semplici da realizzare, le dosi sono molto precise: insomma, non delude mai :)))

Cupcakes

175 ml di latte 60 gr di cioccolato fondente a pezzetti 125 gr di zucchero 60 gr di burro essenza di vaniglia 1 uovo 150 di farina autolievitante (io ho usato la farina normale e il lievito)
2 cucchiai di chocolate chips o di cioccolato fondente a pezzetti

Scaldare il latte in un pentolino. Mettere il cioccolato e un terzo dello zucchero in una ciotola, versare il latte e mescolare. Raffreddare. Mettere il burro in una ciotola, aggiungere il resto dello zucchero e la vaniglia. Mescolare con un cucchiaio di legno fino ad ottenere un impasto soffice, aggiungere l'uovo, il cioccolato sciolto nel latte alternandolo alla farina e infine il cioccolato a pezzetti. Dividere il composto in 12 stampini da muffin. Cuocere a 180°
(con il mio forno preferisco cuocere a 160°, scegliete voi) per 20 min circa.

Glassa: scaldare a fuoco molto basso 115 ml di crema di latte con 110 gr di cioccolato fondente.
Lasciare raffreddare fino a che la glassa abbia raggiunto la giusta consistenza per essere spalmata su i cupcakes.

What makes a helpless Macca-fan experience every emotion from uncontrollable joy to the deepest melancholy in just 2.57 minutes? My Ever Present Past from Memory Almost Full.
I liked it as soon as I heard it. It's both beautiful and overwhelming. But most of all I was struck by the strange sensation of euphoria mixed with sadness with which it is pervaded. Paul talks about a past that went by in a flash but that is also ever present.
So I told to myself: if he says his past is still ever present then it’s the same for me! Although I can honestly say I have no memories of a past without Paul - he has always been there for me and I consider myself lucky for this reason – and even though the years have gone by in a flash, this song makes me realize just how important the past is in my present.
At this point, I need support and thus call upon Linda Collister, a chocolate goddess whose superb creations make life sweeter at any time of the day!
This recipe is taken from "Chocolate", a book I highly recommend. I never get tired of it as the pictures are amazing, the recipes are easy to follow, the ingredients are precisely quantified and I can assure you it will never let you down :)))

Ingredients for 12 cupcakes:
175 ml milk 60gr plain chocolate, finely chopped 125 gr sugar 60 gr unsalted butter 1/2 tsp vanilla 1 egg 150 gr self-raising flour 2 Tbs chocolate chips or chopped plain chocolate
a 12-hole muffin or deep bun tray, lined with paper cases
Put the milk into a saucepan and heat until just scalding. Put the chocolate and one-third of the sugar into a bowl, pour over the milk and stir until smooth. Let cool. Put hte butter into a bowl, then add the remaining sugar and vanilla. Using a wooden spoon, beat until light and fluffy, then gradually beat in the egg. Stir in the chocolate mixture alternately with the flour. Stir in the chips. Spoon into paper cases until three-quarters full. Bake in a preheated oven at 180° C (350° F) Gas 4 for 15-18 minutes until the cakes spring back when pressed in the centre. Let cool, then add fudge topping, if using.

Ganache
115 ml double cream 110 gr plain chocolate, finely chopped
Put the cream into a saucepan and heat until scalding hot. Put the chocolate into a heatproof bowl, then pour over the hot cream. Leave for about 2 minutes, then stir until just smooth. Let cool until thick enough to spread.

Crema di carote e cocco

Questo piatto mi ricorda il nostro primo viaggio a Londra, tanti anni fa.
Una sera siamo andati a cena in un ristorante vegetariano del centro e Gianni
, che è un esperto ;-)) nella scelta dei menu, l'ha ordinata senza esitare mentre io lo guardavo molto perplessa.
Alla fine, dopo avermela fatta assaggiare ha ceduto al mio sguardo implorante: "Vabbè, finiscila tu"! L'ho preparata ascoltando e canticchiando Cmoon.

Ingredienti: 700 gr. di carote 300 gr. di patate 1 spicchio d'aglio 2 cucchiai di olio d'oliva 350 ml di acqua 400 ml di latte 3 cucchiai di cocco grattugiato.

Scaldare in una pentola l'aglio con i due cucchiai di olio, aggiungere le verdure tagliate a cubetti, il cocco e coprire con l'acqua e il latte.
Cuocere a fuoco medio per circa 30 minuti. Togliere le verdure dal fuoco e frullarle con il liquido di cottura fino ad ottenere una crema densa. Servire con erba cipollina fresca.

Coconut and carrot soup

This soup reminds me of my first trip to London many years ago.
One evening my husband Gianni and I decided to try a veggie restaurant in the city centre. Gianni, who is an expert when it comes to choosing from a new menu, ordered this soup without hesitation. All I could do was stare at him in amazement.
In the end, after letting me taste it, he gave way to my imploring eyes: "OK, you finish it!"

I made this soup while listening and singing C Moon.

Ingredients:
700g carrots; 300g potatoes; 1 clove garlic; 2 tbs olive oil; 350 ml water or milk; 3 tbs dessicated coconut

In a saucepan, fry the garlic in the olive oil, add the diced vegetables and the coconut and cover with the water or milk. Simmer over a medium heat for about 30 minutes. Remove from the heat and cool. Blend and serve with fresh chives.

Scones

Ciao a tutti!

Questo è il mio blog di cucina vegetariana. Sono una fan dei Beatles da quando avevo 10 anni, Paul è il mio mito e a lui dedico il mio diario di piatti veggie.
Tuttavia, per la mia prima ricetta, come potevo non ricordare anche gli altri 3 "ragazzi"?
Ieri, dopo tanto tempo, ho riascoltato Don't let me down che mi piace da impazzire e mentre cantavo tutta soddisfatta per i miei Scones ho preso il libro che vedete sopra e ci ho messo vicino questi dolcetti che in Inghilterra si servono con il tè.
Mi piace vedere John e Paul vicini nelle foto, per me restano indivisibili ed è così che mi è venuta in mente Here today, la canzone che Paul ha dedicato a John.
Insomma, alla fine mi sono ritrovata a cantare Here today, mentre in sottofondo John cantava la sua Don't let me down..

Ingredienti: 300 gr di farina 4 cucchiaini di lievito 75gr di burro 50gr di zucchero 1 uovo 100ml circa di latte.

Scaldare il forno a 180°. Mescolare in una ciotola tutti gli ingredienti ad eccezione del latte che va aggiunto alla fine, in quantità sufficiente a formare una pasta morbida. Stendere la pasta formando un rettangolo dello spessore di 2/3 cm.
Con uno stampino per biscotti o con un tagliapasta ritagliare dei dischetti del diametro di circa 6 cm.
Disporre gli Scones su carta da forno e quindi in una teglia. Infornare per circa 15/20 min.

Hi everybody! This is my vegetarian food blog.

Although I've been a Beatle fan since I was 10, Paul has always been my favourite and thus the following dishes are dedicated to him.

Nevertheless coming to my first recipe, how could I forget the other "3 lads"?
Yesterday, for the first time in ages, I listened to Don't Let Me Down, a song I am mad about. While I was singing along, I took the book pictured above and put it next to the scones I had just finished baking. For those not in the know, scones are little buns served at tea time in England with jam and cream.
Seeing John and Paul so close to each other in the pictures in this book made me think they are still indivisible and Here Today, the song that Paul dedicated to John, came into my mind. In the end I found myself singing Here Today while John continued Don't Let Me Down in the background...

Ingredients:
300g flour; 4 tsp baking powder; 75g butter; 50g sugar; 1 egg; 100 ml milk

Heat the oven to 180°. In a bowl mix all the ingredients except the milk. Gradually add sufficient milk to obtain a soft and smooth dough. Knead the dough and flatten into a rectangle approximately 2-3 cm thick.
Using a 6-cm biscuit cutter, cut the dough into rounds.
Place the scones on a baking sheet and then on a tray. Bake for 15/20 minutes.
